Hard White Spring Wheat Flour - Stone ground flour with 13.2% protein. The flavor is milder and the texture, lighter than our Hard Red Wheat Flour. Great for making artisan wheat breads.
Hard Red Spring Wheat Flour - Stone ground at Camas Country Mill from hard red dark northern spring wheat berries. This exquisite, full flour makes a flavor-packed loaf of bread, nutrient-dense and full of a deep earthy flavor.
Red Fife Wheat Flour - This unique flour is the grandfather of many of our modern bread wheat varieties - 15% protein. As a whole-grain bread flour, Red Fife is unparalleled in nutritional quality and flavor.
Pastry Flour - Our Pastry Flour is proving to be an excellent flour for cookies, muffins, pancakes, cakes and pie crusts and recipes calling for baking soda or powder as a leavening agent. At 10% protein (gluten) content, this nutritious flour contains the germ, the oil and the fiber of the white wheat berry minus a small amount of the bran.
Spelt Flour - Although Spelt flour is tolerated by many people with wheat allergies, Spelt is an heirloom variety of wheat which does contain some gluten. This "grandfather" flour makes an exceptional loaf of whole grain bread, a crispy pie crust, or is a perfect addition to your favorite cookie recipe.
Buckwheat Flour - Because it is not a grain, Buckwheat does not cause allergies in those who are gluten-averse. Buckwheat possesses a higher than average protein micronutrient profile and is a silky flour with traces of pastel overtones.
Dark Northern Rye Flour - Rye is quite different than wheat in that it has substantially less gluten and more water-soluble protein along with a wide variety of minerals. It is loaded in natural anti-oxidants and phyto-nutrients. Check out our Recipes page!
Emmer Flour - An old-world heirloom grain with a full-nutty flavor. Emmer may be an alternative flour for people suffering from light wheat allergies. As a low-gluten flour, Emmer dough rises only slightly when baked and is often enjoyed in a flat pita shape.
Teff Flour - This African whole grain is native to the arid lands of Ethiopia. Although it is the world's smallest whole grain, it is big on nutrition. Through testing, we found that our Teff is extremely high in iron, calcium and fiber. Although teff contains some gluten, it is not of the type that people with gluten allergies react to.

Oat Groats - Soft and sweet. Cook for cereal, or add to breads and muffins. Scottish Oatmeal - Stone ground oat groats that make a delicious oatmeal cereal or can be added to breads and muffins. Surprisingly creamy and flavorful, our Scottish Oats retain the heart of the oat (the germ), the oil and the fiber necessary for great health. |
Karma Purple Barley - Super high in protein and anti-oxidants, this beautiful grain has a deep purple hue. It has the common chewy texture of un-pearled barley. This is a relatively “forgotten” grain, and is so good in stir-fries, in soups, risotto or pilaf. So beautiful! White Hulless Barley - Barley makes a wonderful addition to any soup or as an alternative to rice in stir-fries and is very high in fiber and amino acids.
Tom's 3 Grain Cereal - This cooked cereal is a combination of Scottish Oats, Teff Grain and Cracked Wheat, all locally grown and freshly stone-milled. The flavor is exquisite! |
Pardina Brown Lentils - A small French-type Lentil, our Brown lentils have a flavor beyond compare. They hold their shape when cooked, making them a great choice for a summer Lentil salad- marinade. Also great sprouted.
Laird Green Lentils - A large green lentil, these pulses make a delicious Lentil soup. High in protein, these Lentils are great sprouted and used in salads and stir fries. Grown right here in our Willamette Valley- the freshness is world-class!
Red Chief Lentils - This Heirloom Lentil is mild in flavor yet creamy in texture. Their beautiful coloration, either sprouted or cooked are a wonderful addition to salads. They cook quickly - no need to soak. Red Chief Lentils are a botanical Heirloom and by growing them, the Hunton Family is assisting in the historical preservation of the genetic diversity within our food supply.
Crimson Lentils - This glorious orange Lentil is one of our favorites! Crimson's are super high in protein and fiber. We love these orange lentils sprouted and added to your favorite stir-fry or in soups or stews.
3 Lentil Mix - This great mix is a combination of large and small lentils (orange, brown and green) which makes for a robust flavor, varied texture and exquisite color. Did you know that Lentils are the 3rd highest source of vegetable protein foods available?
Lentil-Barley Soup Mix - Soup has never been so full of flavor and nutrition! We cook this wonderful combination for about 40 minutes, before adding onions, potatoes and carrots, and, if you want . . . the meat of your choice.
Sue’s Soup Mix - A mix of beans, lentils and grains: Small Mexican Reds, Laird and Crimson Lentils, Jacob’s Cattle and Hutterite Bean, Oat Groats, Hard Red & White Wheat Berries and Rye Berries. The lentils make it creamy, the beans provide flavor and the berries, a great texture.
