Apple and Spelt Berry Salad

1 C. Camas Country Mill Spelt Berries - cooked

2-3 Granny Smith apples cored and sliced

2 stalks celery, sliced

¼-1/2 c. dries cherries, cranberries

1/3 c. plain yogurt

2 tbsp. ricotta

2 tbsp. lime or lemon juice

2 tbsp. honey

½-1 tsp. cinnamon

 

Cook Spelt Berries: Bring 1 ½ c water to boil. Add ½ c. Spelt Berries. Cover & simmer for  1- 1  1/2 hr. until tender.

 

Make dressing: whisk together (or blend) ‘til smooth- yogurt, ricotta, lime (or lemon) juice & honey. Add cinnamon. Taste & adjust seasoning as needed.

 

In a large bowl, toss the sliced apple, celery, spelt berries and dries cherries/cranberries- with the dressing until everything is coated. Serve immediately of chill before serving.
