Einkorn (Farro Piccolo) has a higher percentage of protein than modern red wheats and is considered more nutritious because it has also higher levels of fat, phosphorus, potassium, pyridoxine, and beta-carotene.

This is a sifted flour, 15% of the bran has been removed and leaving all of the germ, for making it easier to adapt into your recipes while still being 85% whole grain!
