Emmer Foccacia

1 2/3 cups of water at room temperature.

4 tsp yeast

2 cups of Camas Country Emmer Flour.

2 1/2 Cups of Camas Country Pastry Flour

1 tsp sugar

5 Tbs olive oil.

1 3/4 tsp salt

1 garlic clove minced

1 tsp of fresh rosemary.

Whisk together water, yeast, and Camas Country Emmer flour. Let mixture stand for 10 minutes. Add Camas Country pastry flour, 2 Tbs olive oil, salt and garlic. Knead dough for 10 minutes on lightly floured board. Shape into a ball, place on oiled baking sheet, cover with plastic and let rise in warm place until doubled in bulk-about 1 hour.

Preheat oven to 450 degrees. With your hands, stretch dough flat across oiled baking sheet. Sprinkle with rosemary and salt. Cover lightly with plastic and let rise for 30 minutes.

Bake for 13-15 minutes until lightly browned, drizzle with olive oil.

Let cool before serving.
